Slow Cooked Risotto

This is absolutely delicious ....

You will need:

1 cup aborio rice
1 clove garlic
4 tbsp butter
8 rashes rindless shortcut bacon
1/2 bunch spring onions
1 red capsicum
2.5 cups chicken stock
1/2 cup cream
3/4 cup grated parmesan cheese

What to do:

Cut bacon into small stips. Finely chop spring onions. Finely chop red capsicum.
Melt butter in a pan and cook bacon.
Pace bacon, spring onions, cacpsicum and garlic into slow cooker.
Add the rice and stir well.
Pour in stock and mix again
Cook 5hrs on slow or 2.5hrs on high.
Before serving fold in cream and cheese.
Top with shaved parmesan and cracked pepper.
